Awesome Mexican Food


Quesadillas - Chorizo and Mozzarella
Quesadillas are the favourite street snacks of Mexico and one of those "must haves" whenever we cook. Put simply, a quesadilla is a hot tortilla sandwich. Whether you start with some of your favourite fillings or create some different ones, you will soon realise that they can be much more than that.
Ingredients
  • Oil for greasing pan
  • 1 pack  Flour Tortillas
  • 200g Mozarella cheese, grated
  • 1 x 70g pack chorizo slices
  • Hot, mild or medium Salsa

Method

  1. Lightly grease a frying pan and place on the hob to heat.
  2. When hot, place a Flour Tortilla in the pan, top with cheese, Discovery Salsa and chorizo slices and lay another Tortilla on top.
  3. Cook on both sides until browned and the cheese is melted.
  4. Repeat with remaining ingredients.
  5. Cut quesadillas into wedges and serve immediately. 

Chef’s tips

Add Jalapeños to spice it up – add Soured Cream to cool it down.

Fajita Chicken Taco Trays
Ingredients
  • 1 box Taco Trays or regular Tacos
  • 1 small Iceberg lettuce, shredded
  • 350g cooked Fajita chicken strips
  • 1 jar Medium Salsa

Method

  1. Preheat oven to 180°C. Remove trays from packaging, place on a baking tray and heat for 2-3 minutes.
  2. Allow to cool.
  3. Fill the trays with lettuce, top with chicken and garnish with Salsa.
  4. Serve immediately. 
A perfect appetizer or light lunch.

Chef’s tips

Use Soured Cream to cool down the heat and enjoy!

All in One Chicken Fajitas
I created 'All in One Fajitas' recipe to help fajita-making become even more convenient. Rather than frying off the ingredients separately, you cook the chicken first for 3 minutes and then add the vegetables.

Ingredients
  • 450g boneless chicken, cut into thin strips
  • 2 tbsp oil
  • 1 sachet Fajita Seasoning Mix
  • 1 onion sliced
  • 1 green pepper and 1 red pepper sliced
  • 1 pack soft flour Tortillas
To Serve:
  • Regular Salsa
  • Soured Cream Topping
  • Guacamole
  • Sliced Jalapeños

Method

  1. Coat chicken in oil and seasoning mix.
  2. Heat a heavy based frying pan until very hot and add chicken.
  3. Fry for about 3 minutes until well browned.
  4. Add onion and peppers and cook for a further 2 minutes or until the meat is cooked.
  5. Serve with warm Tortillas, Salsa, Soured Cream, Guacamole and Jalapeños, roll up and enjoy!

Buy ready sliced meat and have Fajitas on the table in less than 10 minutes.
